Shrimp tacos are always a good to make on these hot summer days. Here is my way of making shrimp tacos with sweet potato fries.
List of things you will need:
- 1 onion
- 1 green pepper
- 1 red pepper
- Soft taco disks
- Sour cream
- Dried oregano seasoning
- Goya “Sazonador Total”
- Sweet potato
- Olive oil
- Ortega Taco Sauce
- BBQ sauce
First, what I do is cut up the sweet potato. I took ½ of the sweet potato I had, cut that into four parts then sliced them into triangle pieces to make them into wedges. Then put them to boil in a pot on medium heat with a pinch of salt.
While that is boiling I like to clean my shrimp, take off the tail and take out the little nasty stuff inside of it. Then when that’s done, you can chop up the onions and peppers. For my tacos I love having chunky pieces of peppers and onions, so I cut them bigger than I would for other dishes.
Once that’s done throw some olive oil onto a frying pan, then when its warmed up throw the shrimps with the onions and peppers in. Season it with some of the dried oregano and the Goya seasoning.
Strain the sweet potato. On another pan put oil onto it and put the sweet potatoes into fry. Put some of the Goya seasoning on top of the potato wedges to give it some flavor.
While the fries are cooking up, check on the shrimps and stir them up a bit. Throw some more seasoning in there if needed. Check your fries, turn them over so they can get some seasoning in there and color. When I see the shrimp is almost done, I then pop in the taco disks into the toaster oven or on a frying pan to warm them up.
When I take the fries out, I like to place them onto a plate with a napkin to soak up any excess oil.
Start to prep the tacos.
I take the tacos, put the shrimp first, some sour cream next, put Ortega Taco Sauce over it, lettuce, and top it off with some cheese!
I put some BBQ sauce on the side to dip my fries in and my tacos.
