Spinach Ricotta Stuffed Shells! Yum!
For special occasions, I make my special spinach alfredo stuffed shells! I found a similar recipe on Pinterest but I added my own little kick to it. Taste really good too!!
List of things you will need:
- Jumbo Pasta Shells
- 1 bag of Spinach
- Alfredo Sauce
- Ricotta Cheese
- Mozzarella Cheese
- 1 Egg
- A Pan
- Olive Oil
First put the pasta shells to boil with two table spoons of olive oil in the pan for about 30 minutes or so. In the meantime you will be prepping the rest of the things.
Put the egg in the blender, with the yolk too! Take a hand full and a half of spinach, wash it, place it in the blender with the betted egg then add 2 table spoons of ricotta. Blend until you get a light green color (as the picture on the right looks).
I buy my mozzarella cheese in a block and then grade it myself. You can buy the one that comes graded already. If not you can also prep that up while you wait on the pasta shells to finish boiling.
Once the pasta shells are ready, strain them and place them into the pan you will be using. Make sure you butter up the pan before doing so!
After placing all the pasta in the pan, take the spinach ricotta mix and place it inside a Ziploc bag, make a little hole in one of the bottom corners by cutting it off with a scissor. When you have done that, start to pour the spinach ricotta mix inside the pasta shells. i also drizzle it on the top part.
Next, take the Alfredo sauce and drizzle it all over the top of the pasta shells and top it off with mozzarella cheese. Turn the oven on to 350 degrees.
Pop it in the oven for about 15-20 minutes until the cheese is all melted.
And its ready to serve!!
